This recipe is delish and comes from Jackie at La Case de Sweets! The perfect thing to use my ripe bananas...plus a little {much needed} CHOCOLATE!
Here we go!
Ingredients:
- 2 ripe bananas
- 1 large egg, lightly beaten
- 1/2 cup yogurt
- 1/2 stick unsalted butter, melted
- 1 cup sugar
- 1 cup flour
- 1/4 teaspoon baking soda
- Pinch of salt
- 1 cup semi-sweet chocolate chips, melted
- 3/4 cup mini semi-sweet chocolate chips
- 1 teaspoon vanilla extract
Instructions:
2} In a medium bowl, mash the bananas with a fork. With a wooden spoon, stir in the egg, yogurt, and melted butter.
3} In a large bowl, whisk together the sugar, flour, baking soda, and salt.
4} Pour the banana mixture into the flour mixture, and mix until combined.
5} Stir in the melted chocolate chips, 1/2 cup of the mini chocolate chips, and the vanilla extract.
6} Fill the lined muffin tins with the batter. Top with the remaining mini chocolate chips.
These are a bit underfilled {makes more than 12} |
7} Bake at 375 degrees for 15-20 minutes, or until the muffins are dry and cracked on top.
{I baked a bit longer than this to achieve the cracked top...make sure the base is done!}
Cool slightly before enjoying!
